For me personally, it was the guns, the action, the violence, the cruelty of the man. Call me sadistic if you want, but that is what defined James Bond for me. Having now read all the books, I realise that he also has a strong moral sense - his utter distaste for killing in cold blood, for instance - for him, killing has to be "justified", and I respect that. His loyalty to M and to Queen and Country is above reproach.
